I also had an interest in the kitchen when I was younger, learning to cook the food I saw from my mother. My father did not cook much at home. When my mother worked, she made small meals for me and my siblings. My father’s only dish was ‘Pasta e Paate’. This is a South Italian dish … but let me tell you a story. My father could not cook this food well. I think he knew it himself, but we always ate that meal with my brothers. Because there was something more important than the taste in this food. Our relationship with my son Zeno in the kitchen is different. When Zeno was young, he saw the kitchen as a playground. I couldn’t spend much time in the kitchen because I worked hard on weekdays. But on weekends and even after the epidemic, we spent most of our time in the kitchen at home. The thing we enjoyed most about making it together was the fresh pasta. It was important for me to touch and feel the products while making the flour and to give him a special feeling of making food. Making pasta has become a routine, especially on Saturdays. Another passion of Zeno is tomato sauce. A true food lover in this regard. She says that even though she is only 9 years old, she prefers the tomato sauce we make in the summer.

I didn’t try to teach him cooking. I just tried to explain the table culture I got from my family. For us, the table is not just a place to eat, it is a place that unites us, where we share our happiness, sometimes our sorrows and always our memories. In our family, when sitting at the table, no one was interested in anything else, everyone was sitting in modest clothes, and they would not leave the table until everyone had finished eating and talking. Over time, different dynamics emerge, especially in the lives of the new generation of children. As Zeno is invited to the table, the voice “Dad, please wait another 5 minutes” gets louder. But I know that all the tables we sit together make us happy.

Spaghetti with Bolognese Sauce (for 3-4 people)

What do you need?

◊ 1 pack spaghetti

◊ glass of water

◊ 1 teaspoon salt

For sauce;

◊ 400 grams of minced meat

1 onion

◊ 1 carrot

3 tomatoes

◊ 1 clove garlic

◊ 1 teaspoon tomato paste

◊ 2 tablespoons olive oil

◊ 1/2 cup water (can also be used for cooking or pasta soup)

◊ 1/2 teaspoon salt

1/2 teaspoon fresh black pepper

◊ 1 teaspoon thyme

For service;

* 4 tablespoons grated parmesan and some basil

How do I do that?

* Boil 8 glasses of water in a saucepan, add salt when it boils and start cooking pasta.

* For the sauce, cut the onion and tomato into small cubes. Peel a squash, grate it and squeeze the juice. Take garlic powder.

* Fry onion in olive oil till light color. Add garlic, carrots and ground beef, respectively. After adding the minced meat, continue the roasting process until colored.

* Add tomatoes, tomato paste, salt, pepper and thyme. Finally add water and cook on medium heat for 5-6 minutes.

* Take cooked pasta on a plate, add sauce to it. You can mix it in two containers if you wish. Add Parmesan cheese, garnish with a few basil leaves, serve hot, share with your loved ones.

Pasta E Paate (for 4 people)

What do you need?

* 300 grams of pasta

* 550 grams of potatoes

* 150 g celery

* 150 grams of carrots

* 1 onion

* 1 tablespoon tomato paste

* 1 sprig of rosemary

* Olive oil

* Salt and pepper

* Cheese cheese made in Parma

How do I do that?

* Finely chop the celery, carrots and onions.

* Peeled potatoes cut into small cubes.

* Put oil in the pan, wait until the oil is hot. Add onion, carrot and celery and mix. After a few minutes add the potatoes.

* Add rosemary and tomato paste and mix.

* Pour 600 ml hot water, close the lid of the pot and add salt and pepper,
Let it cook on low heat for 30 minutes.

* Once the potatoes are smeared with the back of a wooden spoon, pour the pasta into the pot.

* Add another 250 ml of hot water. Cook, stirring occasionally. The ingredients will be creamy but dry.

* Once your food is cooked, remove the rosemary sprig, add a little more oil and grate and serve with plenty of Parmesan cheese.
